They want them smoked.  Do any of you have a good recipe for smoked trout?</p>

WAAAAAYYYY too much!  Doing it again, or the trout you have, I would just do a light 30min to 1 hr smoke max.  And I referenced Marianski a lot and used his salmon brine.</p>

I never worried about going belly down on the creek bank to get a good long drink of cool water.</p>

The recipe I had years ago used salt, brown sugar, and some other spices.  I really liked it.  I had it saved on my computer but have changed computers a number of times since then and it didn’t get transferred over during one of the changes.</p>

I would say low &amp; slow with Alder or something very mild, like salmon, but I have personally never done it with small freshwater trout. Those were always best for breakfast when I was a kid &amp; we would go up into the then pristine mountains &amp; fish out of the streams &amp; lakes. Back then we did not even have to carry water with us, just a tin cup. Best of wishes on this &amp; it sounds like it could be really good.</p>
