We did some testing on this and I am very curious as to how snack sticks would work with this thing, the lever depress was really smooth and easy. At 1.5 lb capacity you’d go made reloading it for large batches, but for smaller ones? Maybe!

It seems that they are all battery operated too which isn’t a value add in my mind. Meat processing equipment needs to be plugged in, not charged! Me caveman, me like fire and rock, no want fancy metal tool!

I tried something similar when I made langjaeger the first time but the meat just left that form and went back to being round! It is a good idea though. How do you deal with the meat bunching up, do you have someone move some butcher paper away from it?

A great help is to is to roll the farce into short cylinders that drop in then tamp after every other one with my grinder tamper.

I think there are some practical limitations on how large you can make this style of gun. Much larger than this one, and you no longer have something that can be operated easily by hand.

Still, I think this would be a good tool for making restructured jerky and would be convenient for squeezing out meat strips onto a screen for the smoker or dehydrator.

When you are done, you can even caulk your windows with it.

Personally, I prefer whole-muscle style jerky and I have no experience with restructured jerky other than what I have read and what people have told me.
