Though I have done 100% beef, a 50/50 mix of beef and pork and even 100% chicken breast.  It really comes down to what you want in it.  If you are using chicken just remember to use a binder or your sausage will be dry and won’t bind well.</p>

Just keep in mind that the taste will be a little bit different but I am sure it will still come out great!</p>
