My question is can I use the sure cure that I have that came with some of the snack stick seasonings I have ordered from Walton’s (orange packet) and would the measurement be the same? Thanks!</p>
<p dir="auto">4- to 5-pound pork belly<br />
For the cure:<br />
1/3 cup kosher salt<br />
3 tablespoons  black pepper<br />
2 teaspoons pink curing salt<br />
1/3 cup brown sugar</p>

So in my case I put 2% salt to my pork belly, some like less or more, but once you figure out your sweet spot it will be perfect every time with no soaking or pre-tasting required. As processhead noted that’s too much salt for sure. 2% is 45 grams and 2.25% is 50 grams. 1/3 cup is approximately 91 grams which is almost double at 4%. For reference most dry cured meat is only 3%.</p>

The conversion chart shows 1 1/4 tsp  or (.2 oz / 5 g) for 5 lbs of meat.</p>

If it’s still too salty, rinse, rinse repeat.</p>

One thing to do is cut a small piece of the belly after curing it and fry it to see how salty it is. If it is too salty you can soak in water to remove some of the salt before smoking.</p>

The packets are the same as the bulk you can purchase. I believe it is 6.25% sodium nitrate.</p>
