<p dir="auto">No matter what I do I cant get the internal temp to 160</p>
<p dir="auto">somwhere around 140 - 150 is as high as i can get it to go</p>
<p dir="auto">stick and summer sauage in the smoker for 11 -12 hrs</p>
<p dir="auto">I have 3 different thermometers for smoker temp and 3 different meat thermometer and they all pretty much agree with each other<br />
I believe the meat protein is good.  I’ve been using Pepper Stick mix and Cranberry Flavored mix.  Sure Cure, Sure Jell, Citric Acid<br />
Also following the cook schedule very close.  Meat is very tacky prior to stuffing also</p>

<p dir="auto">I actually posted the recipe. Hard to describe the taste and texture but I have always referred to it as poor man patee. It is so easy and actually cooked isn’t he microwave ROFL!!! (Traditionally it is cooked on the stove top but the microwave version is so much easier)</p>

<p dir="auto">With a large kettle full of hot water, you can do a couple of things to avoid breakage.</p>
<p dir="auto">First, while heating the water, give it a stir once in while to help get all the water to an even temperature.</p>
<p dir="auto">Next,  you can shut the burner off just before you put the sausage in the kettle.  Bring the water up to 175-180 degrees.  With the heat removed you won’t get an hot spots.<br />
Monitor the internal temperature of the sausage and remove and chill when you get to the target temperature.</p>
<p dir="auto">You can try and suspend them. In my experience, sausages want to float horizontally on the surface unless you weight one end or something like that.</p>
