Then, seasoned them with the garlic/butter Excalibur seasoning and sous vide them at 130 for 2 hrs. Result: juicy and tasty.</p>

Then weigh the chops and weigh out 2.5% of that in salt. Combine in vacuum bag (or zip bag) and sit overnight. Then cook them any way you want - smoker, grill, stove top, etc. Another option is .025% pink salt #1 to give them a little “hammy” flavor.</p>
