<![CDATA[Eggnog Bratwurst]]>I started a new Flavor of the Month sausage program at the company I work for and rolled it out today with Eggnog Bratwurst as the flagship first ever variety. I sold 20 pounds of this variety in 4 hours today, which is about 80 links. If you haven’t made an eggnog brat yet, it is up there with pumpkin spice brats as my favorite ever sausage varieties, and I have tried close to 100 flavors at this point!

I do make an apple cinnamon bratwurst at work from a seasoning packet that is very tasty as well.
But the sweetness is very well balanced by the coriander and salt, and the extra cinnamon cuts out sweetness with its natural bitterness. The end product is a balanced and very smooth bratwurst with just a flavor after the chew of like “hey man, this is good eggnog!”
Also is super good not in a casing but being used for breakfast with French toast and pancakes

I cooked up 4 links for associates to try. Have to have special protocols in place to give out samples to customers right now so they did not try it first. I just explained how the flavor profiles share so many similarities and they were hooked.

Were you giving out samples so the customers new they liked it before buying?

I was wondering about the sugar levels too. IMO with meat products you need to balance the background sweetness with the savory flavors before it is generally something I care for. Many traditional brat recipes share some of the same seasonings that are used in eggnog.
