Depending on how much of a vacuum I want on the bag, that is when I hit the stop button. High seal is used for pulling a complete vac on the bag and takes the longest. The seal time is about what mine is set at and give a good seal on the bag without burn through. When I Sous Vide things I just pull enough vacuum for mine to go into the yellow or green zone on my gauge (green is 0.08 MPa sorry it’s metric units, pascal). Play with it is all I can say.
