What is 50 grain vinager ? It says to add 8 oz. in your chorizo recipe??? Can I use regular white vinegar and if so how much for 25 lb batch???

50 grain vinegar is the same thing as 5% acidity vinegar. Typical distilled white vinegar from any grocery store is usually right at or around 5%. If you already have some white vinegar at home, it probably is 5% acidity (and it should list what % it is), and if not, it should be super easy to find at any grocery store!
