Maybe a couple of my grown kids would. Haggis is not too far off from some of the other blood and organ sausages we grew up with that used " everything but the squeal"  for ingredients.<br />
For ages the poor folks have figured out how to make delicious food even if they couldn’t afford the so-called choice cuts.</p>

Deer heart is very good. We secretly served some  to a friend and told him it was steak. He  claimed he never ate organ meats, but he scarfed it down and had seconds.<br />
I like deer liver and onions. Not much different than beef liver IMO, but somewhat different than pork liver.<br />
We use deer liver with pork trim and pork fat to make braunschweiger with good results.<br />
The gut pile gets a little smaller every year. lol</p>

The liver we use to make liver sausage, I like to fry it up but I can eat only so much liver by myself, the sausage goes quicker.</p>
