I would definitely share the recipe if I was happy with the results, but I am not As explained above I omitted a couple of spices and that was a mistake. It has a good texture, good addition of the pistachio and peppercorn, I should have added a few big chunks of back fat and should not have deleted the nutmeg

It is definitely less in your face than traditional bologna. The pistachio and tellicherry peppercorn do add some fun flavors. I did make the mistake of omitting a couple of spices because I am not a fan of them but I think it was a mistake. I will have to tweak my recipe a little to be happy with it
