I used Walton’s dry rub bacon cure and followed the directions on the site. I gave mine one extra soak after reading some comments about being too salty. I did add some Walton’s course black pepper to about 2/3 of the belly before smoking. Everything turned out fantastic.  I had to sample a little before vacuum packing and it was great. It is a little time consuming, but worth it.<br />

When we moved to this area about 20 years ago now, we found that brisket was $2-$3 per pound vs the $1.25 per pound we were used to &amp; much harder to get. It has crept up to $3.89 to $4.50 pre pound now. Funny thing is it had already crept to that level about a year or so ago &amp; has not really gone up much more like other beef has, including chuck. Skirt or even Flank went from $.99 for skirt &amp; more for flank for us &amp; easy to get, to just about impossible to get &amp; over $6 to as much as $9 per pound. Insanity is the word for it.</p>

I don’t recall ever seeing swings like this. Everything else is up at least 10-20% or more &amp; it seems &amp; beef is higher than that. I don’t know where the politicians are getting that they are worried that inflation is up 4%.</p>

WOW, in our sheltered life of processing our own bacon and sausage we had not realized how much bacon had went up. Moral of the story do not run out of processed meat and check your freezer inventory today. Yes I currently have 3 half bellies curing now. What is really odd is that the pork bellies are still the same price as they have been for months and the boston butts have actually dropped in price.</p>

I know people that will deal with the larger ones, but the smaller ones when smoked whole are truely delicious.</p>

Here in Michigan, we buy a whole pig from a butcher about 3 hours from us.</p>

<p dir="auto">Costco here carries them  and presently at a reasonable price. Looks like you have a Costco near you in Thornton, but not sure what they carry there.</p>
