My biggest concern is handling the dear and getting infected by the blood while dressing or butchering.

I’m lucky if my red meat is cooked to 140* at the most. I was just referring to the folks that are concerned about those issues.

Wish I had the definitive answer to that. No one probably knows as of yet. I’ll just treat it as I do with the CWD. We’ve had CWD in Wi for some time. I’ve gone by the recommendation that as long as you’re not doing anything with the brain and spinal column you should be fine. The lymph nodes are removed during the butchering process.

I’ve never heard from anyone who has became sick from venison. And no, I don’t cook venison whole muscle to 160. I treat it the same as beef.

KDWP offers free testing. Its a minor inconvenience. I know it has never jumped into the human species. I worried less about it before having kids. Now that my boy has been eating solids and teething, I want to double check it.

The deer herd numbers are down significantly around here and the DNRs own research proves it. Hopefully by next year there will be a quota to harvest. We are well beyond what was called for as a sustainable level.
