There are several options available at Walton’s, and am not sure which to try. Does anyone have any experience with these seasonings or favorites? I am going to make them into large patties with the patty maker.
Any input on favorites would be appreciated.

For me I would crank up the heat. Dixie is pretty good along with the maple. The folks who I make them for enjoy they and say the seasoning is great. I like a bit more heat.

I like it, but its not very hot. I added some cracked black pepper and a touch of chipotle pepper I made from my jalapenos last year. It worked out really well.

Hope to be making some up here in a couple of weeks. I believe the Holly is Walton’s #1 seller for breakfast sausage.

It will give you the flavor you are looking for. The next one I would recommend that is a bit milder is the 1504. There are only a few breakfast sausage seasonings, that aren’t maple or apple, that I haven’t made yet. The Dixie is good, but is mild. I recently sold some W-110 links, and they came back with rave reviews. I thought the seasoning was pretty mild for my tastes.
