<p dir="auto">I think this is a potential problem with manufacturers that modify these manual stuffer designs with a powered drive system.</p>
<p dir="auto">A well designed powered drive system will have a shear pin or other non-destructive  weak link that gives way if the drive system is subjected to an over-torque condition. This prevents expensive damage or catastrophic failure.</p>
<p dir="auto">Reminds me of when my knucklehead friend bottomed out the piston plate of my 8 quart cast iron Enterprise stuffer and kept on torqueing on the handle. Pop! He broke a tooth of the pinion gear! Luckily was able to find replacement that time.</p>

I think I have the same lem el stuffer. LEM 20 lb electric. Mine came with a 1/2” od stuffing tube. One day was stuffing 19 mm casings  the top pin receiver was torn off the side of the stuffer can and lower pin on the same side was bent down that holds the can in the stuffer due to the housing bent. Holy moley thought I had just trashed a 800 dollar stuffer. Well was able to straighten the lower pin that is bolted to housing by added a large finder washer to reinforce and straighten housing. Did on both sides. And I got lucky my brother in law is a welder with 40 plus years experience. Brought him over and he welded that upper bracket back on the stuffer can. He is so good it came out with no distortion to can. You could not tell the repair. Guess who gets samples of my sausages and sticks all the time. Lol<br />
After that I went to 21 mm mahogany casings next size larger stuffing tube and cut oak shims to slide under stuffer can to prevent that from happening again. Now it will kick out motor overload before it damages stuffer. The motors do have a internal overload protection.<br />

When making it for my uncle I add whole mustard seed. I did make a batch with smoked high temp cheddar cheese. I cold smoked the cheese then vacuum packed it and put it in the fridge for 2 weeks before using. Gave a great smoked cheese flavor to the bite but wasn’t overpowering.</p>

I’d give it about 6.5 out of 10, maybe.  It has plenty of kick, but there are many things out there that are far, far hotter.</p>
<p dir="auto">Don’t let the “ghost pepper” intimidate.  While we like things spicy, we are not at all chileheads.</p>
<p dir="auto">You can manage the amount you put in, too.  I add 1 lb. to a 10 lb. meat block.  We like that a lot, but I wouldn’t want any more.  I do have to take a break from it from time to time while eating it.</p>
