<![CDATA[Mistake that turned out Great]]>I was making elk polish potato sausage. I didn’t have the Swedish potato sausage seasoning, so I was going to do the same idea with Polish seasoning. I was also making some elk summer sausage. I had mixed my meat and seasoning and potatoes before I realized that I had accidently put the H summer sausage seasoning in the mix instead of the Polish. Well It turned out great and my wife says that it is the best sausage that I have made so far.

I usually would slice and then cut the slices in half for that.

Just FYI, you’ll need a more than twice the number of casings if you use the 1.5x12 than if you use the 2.4x12. For a 10 lb batch (+ lb cheese), I usually get 12 sausages when using the 2.4x12. With the smaller ones, I filled all 25 in the set and still had enough left in the stuffer to fill another.

Ordered the wrong ones. I used those for Christmas presents and people really liked there size. Easy for a group to eat smaller version in one sitting as summer sausage doesn’t seem to last very long at all in the fridge.

I still don’t understand how the heck I managed that, but I’ve learned that increased age leads to more surprises all the time. I just put them aside and figured I’d do something with them sooner or later.

Well, fast forward a bit to a day I’m making Summer sausage. I soaked those smaller casings instead of my normal ones, and I didn’t realize it until I was actually loading one on the stuffing horn. Rather than pausing to find and soak the larger casings (which I wasn’t sure I even had), I just went with what I had prepared. Fortunately, I had enough. Stuffing and smoking went fine, but I wasn’t happy with it because it wasn’t what I wanted (really, more that it wasn’t what I was used to).

It turns out that I quite liked the smaller sausages. While I still prefer the larger diameter for a couple reasons, the smaller has its advantages. First, it cooked a little more quickly. Second, we finish one more quickly, so we don’t have an “open” one lingering around in the fridge for as long. Finally, it’s a mighty nice for a small gift.

I wouldn’t be surprised if I stuff a handful of the smaller ones whenever I make Summer sausage.
