You are totally geared up. I got a chamber vac a few years ago and I must say, it is an awesome investment. Have run well over 1000 bags thru it and it has not disappointed.

Since January, I now have a grinder, stuffer, mixer, sous vide, plus all the other stuff. Going to make some jalapeno cheddar brats, summer sausage, and snack sticks soon. Also a test run of smoked jalapeno cheddar sausage.
