After stumbling across Walton’s and Meatgistics it kind of got me pumped for doing more home processing. I’m also looking at this as an investment. My kids and grandkids will be using this stuff for years to come.</p>
<p dir="auto">Probably three more pieces to buy. Small kitchen grinder ( Walton’s # 12 ), chambered sealer and the ultimate goal… The PK100 may be a retirement gift to myself.</p>

<p dir="auto">My current processing stuff is generally older, but mostly all commercial grade equipment. Hell, a lot of it is as old or older than I am.  But all of it is fully functional and besides that, I like old stuff that continues to soldier on and gets the job done.</p>
<p dir="auto">So whenever I contemplate a new equipment purchase I find myself asking a couple of totally practical questions to justify the purchase.</p>
<ol>
<li>Will the new equipment do anything  that my old equipment doesn’t already do just fine?</li>
<li>Will the new equipment make my life easier in some way?</li>
</ol>
<p dir="auto">Usually the answer to both question is No.</p>
<p dir="auto">One exception <em>might</em> be my sausage stuffers. I have two. Both are cast iron gear driven vertical stuffers that function no differently than the modern stainless steel equivalents that are  being sold today.  One is a 6 quart with a removable cylinder which makes cleaning and handling  a lot easier.  The other is  an 8 quart one piece Enterprise that is just a beast to handle due to the weight.  The beast was my Dad’s so there is also some sentimental value there.</p>
<p dir="auto">Both have been deep cleaned and reconditioned and have been modified with lengthened crank handles to make them easier to turn when making snack sticks.  Each time after they have been washed, they have to be coated in food grade oil to keep them from rusting almost immediately. But again, they both stuff great sausage.</p>
<p dir="auto">If I were to make a purchase, it might be a modern stainless steel electric or hydraulic stuffer if I found one that was as reliable as the two  I already have. The older I get, the less I like turning manual stuffers.</p>
