Walton’s has a good selection of seasoning packages. You can adjust those to your personal preference. Other fresh style sausages are good place start and gain some experience and understanding. You could also make a nice breakfast sausage and just patty it or just have it ground (no stuffer needed). Just vacuum seal it into portions.
