Last fall I had my patio redone with two kitchen islands and a cedar pergola. One island has a Napoleon 700 Series gasser (first gasser in 20 years) the other my Maverick 1250 built-in (short legs and centered grease drain) and a Kamado Joe Big Joe 2. Since then I also added a PK100 that I wheel out just for sausage/jerky.</p>
<p dir="auto">A pellet grill will never replace the sear you can get on charcoal or gas. Prior to patio I had a Traeger and a Weber Performer. Was tough giving up that Performer. I often do a reverse sear now from the P&amp;S and then sear on gasser. You can get the “trap door” drip tray in P&amp;S that exposes the firepot for searing but figured it was never going to live up to expectations.</p>
<p dir="auto">Whatever pellet you get I highly recommended also having a Weber kettle of some sort for high heat.</p>

The P&amp;S units do look awesome.  I think I’m sold on them.  May have to save up a little longer especially if I go for the 1250 , but seems like will be worth it.  Definitely some solid metal on those things.  Do you use it for grilling/searing too or do you have a separate grill for that?</p>

I live in Chicago burbs and previously had 4 different Traeger. The P&amp;S is so far above them in quality and have cooked in negative temps without any issues other than slightly higher pellet use. The steel on the P&amp;S is ridiculously thick - once it gets heated up it doesn’t budge. I also have a thermal blanket made for it but you can also just use a welding blanket to help insulate (this goes for all smokers, not just P&amp;S).</p>
