I’d like to make some sausage or snack sticks with puddle ducks and geese. If I don’t grill them, I usually sneak them into summer sausage. I’d like to do something different this year. What is your favorite sausage or snack stick seasoning for ducks and geese?

We did this with goose and it was incredible, we also used 26mm cellulose casings for a skinless product and we just did this again with pheasant, both times it was killer. For an actual snack stick seasoning go with Willies and add high-temp cheddar cheese

I mostly use goose breast for brats. Our favorite was cranberry swiss , the apple was great also . There all good just make sure you put in the fat . When doing goose brats or sticks I like about 70/30
