Hello everyone and thank you for your help. I am going to me making snack sticks today for the first time. I watched the Walton video and it said to add 10lbs of pork butt untrimmed, one bag of seasoning, pink cure, and citric acid. On the bag it says it is for 25lbs of meat. So I am just trying to figure out what weight it is? Please help I just don’t want to botch a batch.

Typically you want to have around a 70/30 ratio. So 70% venison to 30% untrimmed pork. So 17.5 lbs venison and 7.5 lbs pork for a 25lb batch. I like going 50/50 myself
