I picked up some mix and cure on the Walton’s big Monday sale. Any suggestions or tips? Never tried it before.<br />
I will be smoking it in the PK100 - I have a smoke schedule from the manual.</p>

Longer answer is that if 12% is the total amount of fat that is going to be in the product then it won’t have a ton of flavor but you should be able to still get a good bind and not experience any problem as long as you get real good protein extraction.</p>

I like our pepperoni without ECA but with it I freaking love that stuff!   Also, I’ve used the cellulose casings for pepperoni sticks before and it worked incredibly well!</p>
