I don’t have turkey cure, but will be adding it to my next order. I do have country brown sugar cure and ham spice. I also have bird booster that I could use instead of the ham spice. I’m ok with the ham taste. just looking to get some cure and phosphate in the turkey Thanks again Happy Thanksgiving!

I can tell you if you are using the Walton’;s Turkey Cure it isn’t needed. We just did a turkey and we injected it then held it overnight in a 50% strength solution and then smoked it for 6-8 hours (I had a lot going on that day so I can’t remember the exact amount of time) and then sous vide it for 20 hours at 165 and it was easily the best Turkey I have ever made and probably the best I have ever eaten!

California Ham Spice is sugar and spices and it is designed to increase the flavor of ham. If you have ever cured a Turkey before you probably know that it tends to make the turkey taste hammy anyway, so I don’t think this would be necessary. It probably wont hurt anything but I don’t know what it is going to make it any better either.
