Or should you cook it and then freezes it. Thoughts I have an open fridge all winter so I can brine away!</p>

After the brining phase I soak it overnight in distilled or filtered water the vacuum seal and freeze until I’m ready to use it.</p>

I pull mine out of the freezer, rinse them pepper them and put them on the smoker for 8-10 hrs. then into the oven cover for another 8-10 hours for my pastrami. Mine are all home cured.</p>

<p dir="auto">Personally, I would rather cook it just to have it all done, but I can see freezing them if you’re saving up for a large cook.</p>

I vacuum seal it after I wrap it in freezer paper. I freeze it because I’ll either use it for pastrami or corned beef since I can’t use the whole brisket at once most of the time.</p>
