Pulls 26 inHg. I used my go to  marinade for skirt steak for fajitas that i would usually just put in a ziplock bag and marinate for 4-6 hours. I did 20 minutes tumbling at 26 inHg and the skirt doubled in size. Basicly it would have made a mighty good thick sliced beef jerky if i dehydrated it, lol. That said, i need to rethink the marinades and brines for meats and poultry if im going to get the hang of this vacuum tumbler. I tried to research this info, and there really isn’t much info out there likes charts for times on thickness, and salinity levels.</p>
<p dir="auto">Anyone here with some experience on more commercial vacuum tumblers that pull 26-29 inHg? I believe the more home use models dont pull above 15. I could be wrong.</p>

<p dir="auto">Honestly, it works great as is. I just figured for an extra $30 i could reduce the speed to an average speed some of the more $$$ tumblers use. The persistent side of me doesn’t want to give up though, lol.</p>
<p dir="auto">Boy did that spatchcock chicken turn out juicy and tender. I injected with sodium phosphate, and did a 5% salt brine in the tank. 25inHg for 30 min. Amazing.</p>

<p dir="auto">I thought of it, but the circuit board takes the 220v then splits the 220v to a series of relays then to the motor, and the 220v also goes to what i believe is a ac to dc transformer that goes to anoher circuit board that controls the timer, and the forward and reverse functions just to name a few. My cheapest solution was to just get a higher ratio gear head. I am just going to ship this gear head back and go through some place like Aliexpress and try and find the correct chinese knock off. I’ll get it cheap but it will take up to 60 days to get here.</p>

<p dir="auto">I believe i mentioned i tried a dimmer switch. That is what a dimmer switch does, but i dont know how many times per second the lowest setting on a dimmer turns off/on.</p>
<p dir="auto">I suppose i could write a arduino sketch to cut a dc relay to toggle a 220v ac momentary switch to any length of time to find the sweet spot (if there is one).</p>

Just tumbled a spatchcock chicken. Even at 28 rpm the mechanical tenderization seperated a leg quarter from the joint. Im actually happy about that because the gear head i ordered doesn’t fit my motor. Bad thing about chinese parts is 20 million company’s make knock offs of the same Model# and fitment is a crap shoot. Oh well, ebay has a good return policy for buyers. Just sucks because i might have to replace the entire motor/gear head since i can’t find a gear head for this chinese knock off. I guess that old  adage “you get what you pay for” holds true. But its still a great machine even if i can’t control speed.</p>

I did 20 minute garlic dill pickles/peppers and an overnight soak turned out crunchier and better then a 7 day brine. Its amazing how well the vacuum draws the liquids in so quickly.<br />
What i did was a two phase. I pulled 30+ inHg and left it soak for 10 minutes then released the vacuum. Then i pulled another 30+ inHg vacuum and left it soak for another 10 minutes before releasing. The results were instant, but overnight really helped infuse that garlic and dill into the pack of pickled peppers.<br />

<p dir="auto">One thing that you might be able to do is put an intermittent “timer” in line to the AC voltage. The revolutions per minute are probably more important than the speed it turns over so if you could turn voltage on every 3 seconds for 1 second you could cut your RPMs down that way.</p>

<p dir="auto">Well couldn’t get SCR to reduce speed. Turns out i need a single phase variable frequency drive which is not easy to find, nor cost effective. Instead i opted to replace the gear head from a 50:1 ratio to a 120:1 ratio. Which puts me at around 12 rpms instead of the 28 rpms the tumbler is at now. Price wasn’t too bad, found one new in the US for $30 should be here next week.</p>

As far as the max the pump can handle no, I don’t have a way to measure that.</p>

So not sure how strong the pump can go but the seal can withstand up to 12"</p>
