<![CDATA[encapsulated citric acid]]>i am making beef snack sticks now…if im going to use encapsulated citric acid, do i still need to add sure cure with the seasoning? i plan on stuffing and smoking right away.

You are correct no need to let the sticks rest overnight with the ECA, but still need the cure.
