My question is do I need to use sure gel or carrot fiber when mixing or can I just use the meat, seasoning and sure cure? Also do I need to incorporate water into the mix for better stuffing.</p>

Just make sure you mix it very well and get lots of protein extraction.  I’d add about a quart of water per 25 lb of meat, if you arent using a binder I wouldn’t add more than that.</p>
