<![CDATA[Soups and Stews]]>Well as I mentioned in another thread, it’s time for a soup and stew thread. Here is what I quickly threw together tonight when I got home from work. It’s a simple potato soup that quick and easy, I won’t take credit for inventing it, it came from my Vitamix cookbook. You will need to fry up a few slices of bacon and sautee 1/4 cup of onion to begin with. Then microwave a couple potatoes, put one cooked potato in the blender with 1 1/3 cup of milk, 1/3 cup cheddar cheese, and 1/4 cup sauteed onion, put the lid on and turn it on and crank it up to high for 5 minutes or until steam start coming out of the top of the blender. Next add the remaining potatoe, bacon, 1/3 cup more cheese and salt and blend for about 30 seconds on a lower speed. This step will give the soup a chunkier consistency. I will caution you that to get the soup to heat up in the blender you will need a higher end blender such as a Vitamix or Blendtec, I’m sure there are others brands that will do it, but those are the first to come to mind. You could probably get away with making this in a lower end blender but you would probably need to heat on the stove at the end of the process.

Well, then they have Manhattan Clam Chowder too, a completely different flavor profile than New England. There was clam chowder on the menu and she said something like “Will the spoon stand up if I stick it in the soup? If not I don’t know what it is but it isn’t clam chowder” at a restaurant that I went to often. Oh man I still haven’t dealt with that fully obviously as I am getting annoyed just telling the story. I went back a few weeks later and apologized to the owner as he had come out from behind the bar to take our order. This is a place that I had not been in for at least 5 years, I walked in to pick up an order and he looked at me and said “its been a long freaking time, wondered if you died” or something along those lines. If anyone is ever in Schenectady NY then you have GOT to try Scotties everything Italian is amazing but their Gourmet Pizza is my favorite food in the world.

Good weekend for hunkering down and watching everyone’s favorite tiger owning carol baskins hating maniac! Just kidding, I finished Tiger King almost immediately!

Out of curiosity…how do people feel about the whole I want Tigers thing? When he was talking to the news and said it would “be worse than Waco” if the government ever tried to come to get his Tigers…that was poorly phrased but I border on libertarian or maybe a better way of saying it is I am EXTREMELY opposed to authoritarianism. I grew up in New York, the land of a million regulations! Parksider am I right on that or have I created a false narrative in my head about the NYS government?
