If you are wanting it harder the only way I know how to go about that would be to cook them more. Maybe try cooking a batch all the way up to 170°?

Or are you saying make a product like a slim jim which already has a hard chew?

If you are looking to increase how hard the chew is remove water. you can do that by either adding less water or running a longer drying cycle at the end of your smoke, or just toss them in a dehydrator.

Now, if you add less water just know that your stuffer is not going to like trying to stuff into a small 17mm casing. When using 17mm or smaller we suggest adding more water to make the stuffing process easier.
