Preparing to make kielbasa using Excalibur signature smoked kielbasa . Online it states it comes with 1oz packet sure cure. And, recipe calls for sure cure. I did not have any packet with my kielbasa seasoning. What exactly is the sure cure for and can I get away without using it? Mixing with carrot fiber and holding overnight regardless. Not planning to use any smoked meat stabilizer. Help!</p>

Definitely going to taste more like a traditional cured kielbasa with it.  To answer your question though there would not have been anything else you could have used to replace the sure cure (same thing as cure #1).  It has a few functions the most important being that it keeps the meat safe from botulism spores through the smoking process (low and slow in meat is the perfect environment for it) and it preserves the smoked meat flavor.</p>
<p dir="auto">So, just to be clear, you did also find the package of cure or did waltons not send it?</p>
