has anyone ever tried or thought of just taking bratwurst seasoning and instead of making patties or the normal brat link and making something smaller like a hot dog size

It will all depend on how you want to cook it on what you add and how much you mix it. If you want it to have a hot dog like consistency then follow the Hot Dog if you want to make more of a brat in just a smaller casing then follow the Basic Bratwurst Processing and stuff it into smaller casings.
