I use those same packs whether I am making snack sticks or summer sausage. They are all meant for 25# meat blocks so you would just want to convert them into grams per lb so you can calculate the correct amounts based on your batch size.

So those were the two items used along with the ag of seasoning.

They both produce a great flavor and you will not be disappointed with either flavor. Very easy to use and I use with the sure cure and binding packet from Waltons. I like to use both high temp cheddar and high temp swiss in mine. Everyone loves them…even the people who claim they don’t like venison!

BBQ Smoked Stick, Pepper Stick are all also good but like deplorablenc1 Willies is probably the best overall snack stick seasoning!

It is a simple flavor and has a little heat at the end but not too hot. I have made them with and without cheese and both are amazing.

Note: in another post you said you are just getting into making sticks. Please go watch Austin and Jonathan’s video and follow the protein extraction part. That is something I learned from them and it may be the most important thing to follow for top quality sticks.
