But this way in the off chance of poor protein extraction the fat can at least render out of the casing rather than build up inside.

I can see the fat that rendered out of the meat and got trapped between the meat and the casings on the first one and it looks perfect on the second one! This is a great visual representation of how important protein extraction is!
