Would it be possible to add all ingredients and go ahead and mix sausage then leave overnight, then add citric acid the following day, remix and then smoke?

Then adding cold water right before stuffing will soften the mixture. Summer sausage goes well because of the larger stuffing tube. We do the same for snack sticks that is harder through the smaller tube.

It is always best to mix and stuff on the same day, I have tried this in the past and stuffing always becomes very difficult!
